Brinjal_FryBrinjal Fry / Ennai Kathirikkai is a common recipe in almost all tambrahm house.

This recipe is so simple and taste just wonderful, goes perfect with steamed rice, chapati, roti and almost all rice varieties.

I just love this Food for no reasons. Baby brinjals when cooked in lots of oil becomes tender and delicious in taste. The main ingredient for this recipe is small purple brinjals, coriander powders and chilli powder added with salt.

People who dont love brinjals especially kids , will surely eat this because of the taste.

  • 1/2 KG Brinjal
  • 3 tbsp Oil
  • 1 tsp Mustard
  • 2 tsp Chilli Powder
  • 1 tsp Turmeric Powder
  • salt As Needed
Mix
  • 1 tbsp Coriander Powder
  • 4 Pieces Red Chilli
  • 2 tsp Bengal Gram
Garnish
  • Curry Leaves As needed
  • Coriander Leaves As needed

  • 1/2 KG Brinjal
  • 3 tbsp Oil

Mix
  • 1 tbsp Coriander Powder

Instructions
  1. Step 0 : Fine Grind, Coriander powder, Red chilli and bengal gram after roasting it for a minute in high flame - MIX

    a. Take 10-15 Brinjals of Small to Medium size. (Make sure that the brinjals neither too big nor small)
  2. a. Wash clean the brinjals and remove the stems from it.

    b. Split cut the brinjals in four halves from the stick end, making sure that the brinjals are not broken.
  3. a. Fill water in bowl, Add Turmeric power (pinch) and salf if you really need it. We will anyways add salt in the stuff

    a. Boil the brinjal for 12 minutes time.

    Note: The brinjal should not become too soft
  4. a. Ennai Kathrikkai Mix

    b. Salt

    c. Chilli Powder

    d. Turmeric Powder

    e. Masala Powder (If you like the taste)

    f. Methi Leaves (If you like)

    g. Mix everything
  5. a. Stuff the Mix in the brinjal(Making sure its not broken into pieces)

    b. Smear the brinjal with oil, Not make it too oily. Just smearing or sprinkle 1/2tsp of oil on all the brinjals.

    c. Sprinkle the mix on top of brinjal evenly, so that brinjals are covered with the mix

    Note : If you dont smear the brinjals with oil,the mix will not stick properly
  6. a. Ona pan add oil and gently place the stuffed brinjals over it once it gets heated.

    b. keep the heat at low mode

    c. Keep a watch on the Brinjals that it doesnt turn black.

    d. After few minutes, Turn the brinjals position so that its fried evenly. e. Add coriander to garnish, Serve Hot.
Recipe Notes

Remember :

  • Add Masala powder only if you like the taste
  • Make sure that the Brinjals are boiled properly if old people are going to be served
  • For North indian taste
    • Add Bit of Mango Powder
    • Add Very little of Tamarind paste (Pinch)
    • Add Pepper
